#890: Unif / Tung-I Mushroom Flavor Ramen Noodles

$

So today I have two mushroom flavored instant noodles I’ll be doing. First off will be this Unif/Tung-I mushroom pack. What’s interesting about this one is that Unif Tung-I is usually from Taiwan, but this one’s from Vietnam. Anyways, let’s try this one and see how it is.

Here’s the back of the package (click to enlarge). Notice all of the German on here!

The noodle block.

Dry seasonings.

Powder as well as veggies!

The seasoned oil packet.

Looks interesting.

Finished (click image to enlarge). Added some baked chicken, yellow onion, green onion, Krazy Mixed Up Salt and Ajishima Kimchi furikake. The noodles are thin and have an almost buttery taste. The broth has a mushroom taste but its not overwhelming; almost like sauteed mushrooms. Pretty good – 3.5 out of 5.0 stars. UPC bar code 073217060068 – get it here.

More mushroom noodles. They certainly looks nice from the pictures on the package – hao hao about we give ’em a try? Ugh…

Here’s the back of the package (click to enlarge).

The noodle block.

Powder seasoning.

Bits’n’pieces in there, too.

Oil packet.

Looks like vegetable oil.

Finished (click image to enlarge). Added yellow onions, broccoli, green bell pepper and Huy Fong Sriracha chili sauce. The noodles aren’t too bad – pretty standard Hao Hao kinda stuff. The broth is light and mas a mushroom flavor. This is pretty basic – nothing fancy; if you want something with a mushroom taste, I think this will work for you. I found it kind of lackluster – I really like Vina Acecook’s products usually, but this one was very meh. 2.75 out of 5.0 stars. UPC bar code 8934563106164 .

Here’s one we got during our summer vacation. Found it at the Uwajimaya in Beaverton, Oregon. Mushrooms… Well, Let’s give it a go!

Here’s a close-up of he text on the lid (click to enlarge)

Hey – it’s a fork!

The noodle whorl.

This is kind of interesting; I’ve seen many many dual packets like this, but never one that is horizontally labeled.

The seasoning powder with the chili powder on top.

Seasoned oil.

Looks like a clear oil. Has some bits in there though.

Bits of shitake.

Little bits!

Finished (click to enlarge). The noodles are pretty good; they’re bean vermicelli. The broth is spicy with a strong chili powder taste and very mushroomy. The bits of mushroom are spongy. This was not my cup of tea. 1.25 out of 5.0 stars. If you love mushrooms in all forms, this might be for you, but as for myself, this is really funky. UPC bar code 761934016481 – get it here.

Onward and upward with Meet The Manufacturer! My wife is home today and she loves mushrooms – thought I’d share this one with her. Let’s check it out!

Here’s the back of the package (click image to enlarge). Vegan.

Finished (click image to enlarge). Added beef and sliced white mushrooms sauteed in soy sauce. The noodles again have a nice gauge and agreeable chewiness. The flavor is very light on this one – also not very spicy at all compared to the others. Little bits and pieces of button mushrooms can be found throughout the noodles, along with other nice bits of veggies. This was pretty good stuff – and I’m generally not a big fan of fungi! 4.0 out of 5.0 stars. UPC bar code 782733015055.

As I’ve mentioned before, I’m not a huge fan of mushrooms. I’ve liked them a little more and more over time, but they’re really not something I seek out and enjoy thoroughly. On the other hand, my wife absolutely loves mushroom.s and savors them. She also really likes udon, so I thought I’d make these for her. Let’s open this bag up and see what’s inside.

Here’s the back of the package (click image to enlarge). Contains fish. To prepare, boil 1 3/4 cups water. Add the noodle block and boil for 2 minutes, adding the contents of the soup base sachet right before the end. Stir and enjoy.

I’ve always found these quite interesting. Why? Well for starters, they seem to always have a pack of seaweed with them, and not a small one but a decent portion. Also, the noodle blocks are unique as well. How? Well, read on and you’ll see. This one is from Hong Kong – let’s check it out!

Here’s the distributor / import sticker. Looks to be meat free but check for yourself.

Here is detail of the side panels (click image to enlarge). To prepare, empty sachets into bowl, add boiling water to line, steep for 4 minutes, stir and enjoy.

Here’s detail of the lid (click image to enlarge).

Included fork!

So what’s the hubbub about the noodle block? The fact that there are two of them! I’ve never seen this elsewhere – lots and lots of noodles in this one!

The powder soup base sachet.

A very fine powder.

The paste sachet.

Has a nice artificial beef scent.

The other unique thing about these bowls are the seaweed sachets.

That’s quite a bit of seaweed there!

Finished (click image to enlarge). Added beef and sweet onions as well as a dash of Urashima Sesame & Salt furikake. The noodles have a very familiar instant noodle gauge – kind of squareish. Decent consistency although very light. The broth has a very good flavor, and although not extremely hot or spicy, is full and good. The seaweed is everywhere and works well. 3.5 out of 5.0 stars. UPC bar code 4892616018915.

#1367: Sawadee Instant Noodles Vegetable & Mushroom Flavour

Here’s one that is made in one country for sale in another. This is made in Malaysia, but most easily found in the UK.  Anyways, let’s check this one out!

Here’s the back of the package (click image to enlarge). Looks to be meat free but have a look for yourself. To prepare, boil 250ml water. Put the noodle block and seasoning sachet content in a bowl and cover with boiling water and a lid. After 4 minutes, open it up and stir. Enjoy! Alternatively, you can just boil 250ml water in a pot then take it off the heat and add the contents and put a lid on it – that’s what I do.

Here’s the noodle block – very straightforward and standard insofar as size.

The soup base powder sachet.

Truly, this is a powder – extremely light and fluffy.

Finished (click image to enlarge). Added sweet onion, corn, leek, peas, carrot and BonCabe Level 10 chilli seasoning. The noodles were lackluster; crumbly. The flavor had a mushroom component, but didn’t really remind me of vegetables to speak of. 1.5 out of 5.0 stars. UPC bar code 5023751102040>.

I don’t know why, but I’ve always found mushroom farming fascinating.

#1403: Tesco Everyday Value Chicken & Mushroom Flavour Noodles

Here’s one that Joe B. and Sarah B. sent me from Nottingham, UK – thanks! Tesco’s a big grocery store chain in England. One thing I’ve found that is a little difficult are European nutrition facts on instant noodles. It’s odd; they like to do a per 100g showing, then a per serving. The number often seem ridiculously off; a lot of the time it’s a calorie vs joule issue (yep – they use a different measure of energy over there too). Let”s see how this chicken and mushroom flavor cup goes!

Here’s a detail of the side panels (click image to enlarge). Says it is ‘suitable for vegetarians.’ To prepare, Add boiling water to fill line and let sit 2 minutes. Give it a good stir, and then let sit for another 2 minutes. Stir again and enjoy!

Detail of the lid (click image to enlarge).

No seasoning sachets – simply a cup of uncooked noodles and seasonings.

Finished (click image to enlarge). Added chicken and mushrooms. The noodles were floppy; more like an egg noodle. The liquid turned into a sauce (which is standard to British varieties). The flavor was almost nonexistant; extremely bland and begged for salt. Not to my liking. 0.5 out of 5.0 stars. UPC bar code 5051898316952>.

Here’s another one sent by a friend in Indonesia – thank you! La Fonte is a line by Indofood, makers of Indomie. I don’t usually review boxed instants like this but this one’s really interesting. I reviewed a different one a while back and though I ought to give this one a try. Let’s check it out!

Here’s the back of the package (click image to enlarge). Contains chicken broth. To prepare, boil 550ml water. Cook noodles for 4 minutes, then drain. Put noodles on a plate and add contents of sauce sachet. Enjoy!

A little bag of spaghetti noodles.

The sauce sachet.

Finished (click image to enlarge). Sampled the noodles and sauce, then added mushroom and minced beef that was sauteed with garlic and Worcestershire sauce. The noodles were good – excellent gauge and were your standard spaghetti noodle. The sauce was nice and sweet with a strong tomato flavor. The mushrooms were of good quality. 3.75 out of 5.0 stars. UPC bar code 8888900620113.

I got this colorful package a few weeks ago from a reader. She had asked if I could identify and find an instant noodle for her.

A relative of hers found it in Japan and brought a bunch back for her! She offered to send me one and I accepted. Thank you very much! The issue I now have is that I can’t read Japanese – what is the name/brand/variety of this one? I know it’s mushroom flavor – any help would be much appreciated!

The Ramen Rater’s Top Ten Instant Noodles Of All Time Hong Kong 2015 Edition

$

I thought to myself recently that it would be great to end 2014 and start 2015 with a new top ten list – but from where? A couple places came to mind, and Hong Kong sounded like a good one. I’ve found a lot of excellent instant noodles that have been from Hong Kong. Been hoping to see more arrive here in the United States, but many of the ones on this list I’ve found up in Canada. I would definitely like to reach out to instant noodle companies in Hong Kong to take part in Meet The Manufacturer; there’s not been a Hong Kong participant yet! With that, here’s the top ten instant noodles of Hong Kong – the best and most memorable – from the last 1,553 reviews. Enjoy and Happy New Year, Hong Kong!

#10: Nissin Demae Iccho XO Sauce Seafood Flavour

The noodles are pretty good with a very standard gauge and quality. The broth however is quite nice. The XO sauce gives it a very rich seafood flavor that is most enjoyable and hearty. The inclusion of a decent amount of veggies and narutomaki rounds things out well. Original review

#9: Four Seas Seaweed Hot & Spicy Instant Noodle (Mushroom & Beef Flavour)

The noodles were pretty good – nice gauge and a good mouthfeel. The slight crumble gave them a kind of nice texture with the broth. The broth has a definite spicy beef flavor and then the mushroom flavor which is kind of in the background and very good. As for the seaweed, it really complimented things quite a bit and made for a fitting garnish. Original review

#8: Doll Instant Noodle Pickled Vegetable Flavour

Doll’s noodles always look very nice – not bleached white but a nice warm rich wheaten yellow color. They are excellent as far as texture and flavor go too.  The broth was perfect – not strong but not weak. It was just right. I added the two fried eggs and all together this was a fantastic bowl of noodles for a early evening nosh while studying for a computer tech certification. Original review

#7: Doll Instant Noodle Spicy Tonkotsu Flavour

First, the noodles are very nice, high quality and very tasty. The broth has a nice flavor to it and was perfect. I really like Doll products and this is no exception. Original review

#6: Nissin Cup Noodles Seafood

So first off the veggies rehydrated quite nicely. Also, there are bits of seafood in there – real ones! Apparently its pollack, but also there is nondairy creamer in it! Weird… The noodles are great, the broth is great, everything is great! Original review

#5: Nissin Cup Noodles Seafood Curry

The noodles steeped perfectly. The vegetables and little bits of dehydrated fish came out just perfect, and the broth was very curry. My only complaint was that the curry flavor overwhelmed the seafood taste so that there was really none at the end of the day. I really liked this one though. This one was in the 2013 Top Ten Cups list, the first for Hong Kong. Original review

#4: Doll Instant Noodles Artificial Chicken Flavour

This is absolutely spot on – possibly the best chicken instant noodle I’ve ever had – here’s why. The noodles are in the way that Doll’s usually are – great texture and firmness, not bleached but golden. The broth is very hearty, and flavorful. Original review

#3: Nissin Demae Ramen Sesame Oil Flavour Noodles With Soup Base

The noodles are neat – thin and very elastic with a great consistency – some of the best I’ve ever had from a big cup. The broth is quite good too – a nice sesame flavor and rich body. The vegetables were excellent as well – great re-hydration and quality and the narutomaki was plentiful. Original review

#2: Fuku Superior Soup Instant Noodle

This stuff is EXACTLY like Nissin Chikin except it has a little extra powder with it! Originally, my favorite noodles were Nissin ‘Roasted Ramen,’ a product they came out with in the USA when I was a kid. They stopped making it so we hunted for it and they were able to help us out at Uwajimaya in Seattle where they clued my folks in about the Nissin Chikin. This is exactly like that stuff and I’m quite happy. Original review

#1: Nissin Demae Ramen Shoyu Tonkotsu Artificial Pork Flavour

The noodles are great – gauge and chew are very good. The broth is wonderful – has a very rich pork and soy flavor that was well balanced and deep. Hooray for Hong Kong! Original review

#1604: Unzen Mushroom Honpo Shiitake Nutritious Noodle

So we’re moving. Seems like we just moved here a little while ago, but we’re moving again. I’m pretty glad too – new scenery is always nice and it’s closer to my wife’s work. I’ve been doing a lot of packing and throwing things away. During this I found this one that was under a couple of things. It was sent a while back by a reader – she was trying to find out how to get her hands on these as she really enjoyed them when in Japan. I figured it out and as a thank you, she sent me a pack! Translating this one has proven quite a task – I’m still not sure I’ve got it right in any way, shape or form. If I’m way off, let me know! Let’s look inside – I think it should be interesting.

Here’s the back of the package (click image to enlarge). Not sure whether meat is involved. To prepare, add noodle block and vegetable sachet (dry silver one) to a bowl and add 400ml boiling water. Cover and let steep 3 minutes. Add remaining sachet contents and enjoy!

The noodle block.

A sachet with lots of sliced shiitake mushrooms in a clear liquid.

Unsure of what this is.

The dry vegetables sachet.

Looks like the onion sachet.

A liquid base sachet.

Has a soy scent.

Finished (click image to enlarge). Didn’t add anything. The noodles had an alright texture and chew to them; not the best I’ve ever had but not bad. The broth has a salty soy kind of flavor with a kind of sweetness to it. The additions were interesting; the onions were just excellent. The sachet with the large pieces of mushroom was the culprit for the sweetness I believe. The pieces of mushroom were very large and of good quality. The clear sachet’s contents were still odd and very mushy when added and soaked up liquid. I wasn’t a big fan of everything put together.  1.0 out of 5.0 stars. JAN bar code 4966994003457.

Shiitake: The Healing Mushroom (from Amazon) – The shiitake is one of the most highly prized foods in Oriental cuisine, lending its rich, caramel-like flavor to seasonings, sauces, soups, even carbonated drinks and candies. Yet few aficionados of this gourmet delicacy are aware of its high nutritional value or of its important role in traditional Chinese medicine and in the modern search for botanical remedies. Traditionally classified as a food that activates the blood, shiitake has been used as a folk treatment for colds, measles, and bronchial inflammations. Shiitake: The Healing Mushroom takes the reader on a lively tour of the healing properties of one of the world’s most delicious foods.

Another one I figured I ought to get to before we move. This one is from Hong Kong and one of a line of interesting flavored macaroni instants by Nissin. Amongst them are seafood, chicken and abalone and many more. Let’s check out this mushroom vegetable flavored Nissin Demae Iccho variant!

Here’s the back of the package (click image to enlarge). Looks to be meat free but check for yourself. To prepare, add macaroni to 500ml boiling water and cook for 3 minutes. Add in sachet contents and stir. Enjoy!

The macaoni noodles.

The soup base sachet.

Has a kind of vegetable scent to it along with soy and salty notes.

Finished (click image to enlarge).  Added spring onion. The noodles have thin walls and a light texture. The broth has a mellow mushroom flavor – not deep and musty but gentle with a nice salty taste. 3.5 out of 5.0 stars.EAN bar code 4897878410057.

#1613: Maruchan Kaoru Maitake Tempura Udon

Got this one on last year’s birthday trip to Canada. Since my trip is coming very soon this year, I figured it was time. So, what is maitake? Wikipedia had this to say:

Grifola frondosa is a polypore mushroom that grows in clusters at the base of trees, particularly oaks. The mushroom is commonly known among English speakers as hen-of-the-woods, ram’s head and sheep’s head. It is typically found in late summer to early fall. In the United States’ supplement market, as well as in Asian grocery stores, the mushroom is known by its Japanese name maitake (舞茸), which means “dancing mushroom”. Throughout Italian American communities in the northeastern United States, it is commonly known as the signorina mushroom. G. frondosa should not be confused with Laetiporus sulphureus, another edible bracket fungusthat is commonly called chicken of the woods or “sulphur shelf”. The fungus becomes inedible like all polypores when they are older, because it is too tough to eat.

The fungus is native to the northeastern part of Japan and North America, and is prized in traditional Chinese and Japanese herbology as a medicinal mushroom, an aid to balance out altered body systems to a normal level. It is widely eaten in Japan, and its popularity in western cuisine is growing, although the mushroom has been alleged to cause allergic reactions in rare cases.

Well, I hope I’m not allergic to this kind of mushroom – fingers crossed! Let’s have a look at this Japanese bowl.

Here’s the distributor/import sticker (click image to enlarge). Contains fish.

Detail of the side panels (click image to enlarge). To prepare, add in contents of sachet and add 360ml boiling water and cover for 5 minutes and stir. Enjoy!

Detail of the lid (click image to enlarge).

The noodle block.

The soup base sachet.

Has a somewhat acidic scent.

In the bowl on it’s own was a lot of tempura and some kamaboko fish cake pieces.

Finished (click image to enlarge). Added spring onion. The noodles are broad flat udon with a decent consistency and mouthfeel. The broth is a salty soy kind of thing. The tempura was good and indeed contained mushroom. The kamaboko was hydrated well. 3.25 out of 5.0 stars.  JAN bar code 4901990330596.

Paldo Foods is a South Korean company, and it looks like they’ve expanded to Vietnam with Paldo Vina. Now mushroom isn’t generally my favorite flavor, but I’ve been surprised in the last year or so at how much I’ve liked many mushroom instants. Let’s see how this one pans out.

Here’s the back f the package (click image to enlarge). Looks to be meat free, but check for yourself. To prepare, boil 400-450ml water and add noodle block and sachet contents. Cook for 4 minutes and enjoy!

The noodle block.

The powder soup base sachet.

Has a musty mushroom kind of scent.

The vegetables sachet.

A smattering of vegetables.

Finished (click image to enlarge). Added mung bean sprouts, mushrooms and spring onion. The noodles are pretty standard ramyun – thick with a little more chewiness. The broth had a little spicy hit and a kind of funky mushroom flavor. Not a fan of it as it reminded me of dirt. 1.,5 out of 5.0 stars. EAN bar code 8936028640312.

Here’s one we found up in Canada during my birthday trip earlier this year. This one’s a little tricky to figure out; the distributor/import sticker mentioned shiitake, but another site I saw mentioned carrot, and indeed there’s a carrot on the package. Anyways, this one looked kind of interesting so let’s have a look.

Detail of the side panel (click image to enlarge). Looks to be meat free but check for yourself. To prepare, empty sachets into cup and add boiling water to line. Cover and steep for 3 minutes. Stir and enjoy!

Detail of the lid (click image to enlarge).

The noodle block. Wondering if they perhaps contain cattor?

A large dry seasoning sachet.

Vegetables and powder.

A liquid sachet.

A little paste.

Finished (click image to enlarge). Added sliced green onion. The noodles hydrated very well and have an alright texture to them. The broth has a mushroom flavor to itthat one would expect. The included bits of vegetable hydrated well. 2.75 out of 5.0 stars.  EAN bar code 4710110241694.
